 I received many requests regarding the Artichoke!!!

So I post today the preparation of the Artichoke Sauce, you will use it as condiment for Pasta.

Kindly refer to the Category “Preparations” for Cleaning Artichoke.

 

 

  Italian Recipe: Cooking Traditional Vegetarian Pasta with Artichoke Sauce Aldentekitchen

Ingredients: (as condiment for 4-6 portions of Pasta)

three cleaned Artichoke – half spoon of Garlic and Parsley mix

a third of glass of Extra Virgin Olive Oil – half glass of White Wine 

two pinches of Marine Salt – two spoons of Butter

 

 

 

 

 

 

 

 

 

Cut the Artichoke stems in small rounds to fry with Extra Virgin Olive Oil: cut short less than one inch.

 Fry until they fade.

 

 

 

 

 

 

 

 

As the stems brownie add the mix of Garlic and Parsley and stir.

Cut in half the Artichoke heads, then check the inside and to cut off the internal thorns (to be discarded) using the scissors.

 

 

 

 

 

 

 

 

 

 

You must check with our fingers that the internal thorns are not sharp,

I cut also the tiny ones: they can sting your throat.

Cut transversely in pieces until you reach the middle of the head, this part is harder than the bottom of the Artichoke.

 

 

 

 

 

 

 

 

 

 

Let the bottom aside for now, cook the harder upper part first. 

 

 

 

 

 

 

 

 

 

 

 

Add to the stems in the frying pan and let fade.

 

 

 

 

 

 

 

 

 

 

 

 

Cut in small pieces the head bottom. 

 

 

 

 

 

 

 

 

 

 

Your fingers skin becomes black because the juice of the Artichoke, no worries! You will use Lemon juice to clean it up!

 

 

 

 

 

 

 

 

 

 

 

 Very good, no more thorns and really tender and fresh Artichoke.

 

 

 

 

 

 

 

 

 

The Artichokes upper parts faded so we add the bottoms. 

 

 

 

 

 

 

 

 

 

 

 

To regulate the salt add just two pinches for now, later on you must check if more salt is needed

Add the White Wine and immediately seal with a lid so the vapors of the White Wine spread making your sauce tasty!

 

 

 

 

 

 

 

 

 

 

Cook 5 minutes closed.  Just to remind: first we cooked the stem, then the upper part and for last the bottom part: this sequence is needed to proper complete the sauce.

After five minutes add the butter, if you are allergic to Milk and Butter simply do not add it! you can add one or two spoons of good Extra Virgin Olive Oil instead!!!

 

 

 

 

 

 

 

 

 

 

Let the butter melts, after that take out from the fire, keep it warm until the pasta is ready;

today I cooked  “Tortiglioni”, you can sunk the pasta in to the sauce and stir or simply put the pasta in to a bowl or individual plate and drop the sauce on top!
