Cooking Foods: Italian Recipe Duck Sauce – Sugo D’Anatra

 

Ingredients:

 

one breast of duck

one pepper bell

garlic

extra virgin olive oil

marine salt

white wine

tomato

 

 

 

 

I got a splendid breast of duck.

 

 

 

 

 

 

 

 

 

 

 

 

I use simple ingrediants: garlic and pepper bell.

 

 

 

 

 

 

 

 

 

 

 

 

slice the pepper bell and set in to a fry-pan.

 

 

 

 

 

 

 

 

 

 

 

roast with a little of extra virgin olive oil.

 

 

 

 

 

 

 

 

 

 

 

chop the garlic.

 

 

 

 

 

 

 

 

 

 

 

 

add the garlic to roast

 

 

 

 

 

 

 

 

 

 

 

 

as the garlic takes color seat on top the duck with the skin under and cook for 5-6 minutes.

 

 

 

 

 

 

 

 

 

 

 

 

marine salt is added on top of the meat note that this quantity of salt is enough for both sides of the meat.

 

 

 

 

 

 

 

 

 

 

 

set half of the salt on the skin side while the meat side is roasting for 5-6 minutes.

 

 

 

 

 

 

 

 

 

 

 

 

turn up side down the skin has to become roasted to loose all its fat, keep cooking on the skin side.

 

 

 

 

 

 

 

 

 

 

 

 

you use a fork to check and to move the breast. turn upside down 4-6 times during the cooking time (approximate 20 minutes).

you will see the garlic and the pepper bells taking a black color: this is needed to give a light smoked flavor to the breast and to darken it;

the check is carried out piercing the meat with a toothpick: when pink fluid is gushing out it is ready: the meat inside should become light pink.

as it is cooked take from the fry-pan and prepare on the cutting-wood.

slice it with a sharpen knife.

 

 

 

 

 

 

 

 

 

 

 

 

set back the sliced meat in the fry-pan.Sugo d'Anatra (14)

 

 

 

 

 

 

 

 

 

 

 

 

slice the second half of the breast: as you have all the meat sliced back in to the fry-pan start again the fire.

 

 

 

 

 

 

 

 

 

 

 

as it starts to fry again you will add half glass of white wine.

 

 

 

 

 

 

 

 

 

 

 

 

half glass is enough.

 

 

 

 

 

 

 

 

 

 

 

 

cover well with a proper lid: the steam produced will meke the meat tastier.

 

 

 

 

 

 

 

 

 

 

 

let cook covered for 3-4 minutes.

 

 

 

 

 

 

 

 

 

 

 

 

add some tomato juice (half glass or one small peeled and chopped tomato) otherwise use tomato concentrate (like I do here) one spoon is fine.

 

 

 

 

 

 

 

 

 

 

you can now stir the sauce produced.

 

 

 

 

 

 

 

 

 

 

 

 

keeping the fire low cook for 6-8 minutes the sauce will reduce.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

as the sauce becomes more dense set the fire off.

cover to keep warm.

cook the pasta.

 

 

 

 

 

 

 

 

 

 

 

 

when the pasta is ready al dente drop it in to the sauce.

 

 

 

 

 

 

 

 

 

 

 

stir well the pasta to get all the sauce: you can keep the fire on during this process.

 

 

 

 

 

 

 

 

 

 

 

 

grated parmisan cheese is optional.
