Ingredients:

 

Sugo d'Anatra (b)

one breast of duck

one pepper bell

garlic (small quantity)

extra virgin olive oil

marine salt

white wine

tomato (one small chopped or one glass of juice or one spoon of concentrate)

slice the pepper bell and chop the garlic.

put the sliced pepper bell in to a fry pan: set the fire on (moderate).

 

 

 

 

 

 

 

 

 

 

 

 

as it start to roast add just one spoon of extra virgin olive oil.

as the pepper bell starts to fade add the chopped garlic.Sugo d'Anatra (6)

 

 

 

 

 

 

 

 

 

 

 

 

 

 

let fry until the garlic starts to fade.Sugo d'Anatra (7)

then seat the breast on top with the skin down, rise the fire high cooking for 6-8 minutes this in order to roast the skin.

 

 

 

 

 

 

 

 

 

 

I show you now the quantity of salt: this is enough for both sides of the breast.

turn the breast up side down to cook the meat side.

spread half of the salt on the skin.

cook for 5-6 minutes the meat side.

Turn the skin side down again.

no worries if the garlic and pepper bell darkened: it is fine to get the right flavor.

spread half of salt on the meat side.

let roast the skin well for another 5-6 minutes: all the fat has to liquefy.

 

 

 

 

 

 

 

 

 

 

after this turn upside down again cook the meat side for another 4-5 minutes.

set the fire off.

 

take the breast from the fry-pan.

seat the breast on a cutting-wood.

slice it with a sharpen knife.

put back the sliced brest in to the fry-pan and re-start the fire (moderate now).

cover with a lid.

cook the pasta al dente.

as the pasta is ready drop it in to the sauce start the fire and stir well for two minutes.
