Lets see how to fry breaded mushrooms old fashioned Italian style !

 Ingredients:

Mushrooms (Porcini) – four pounds

Bread (grated) – half pound

Eggs – six

Fresh black pepper – two pinches

Peanuts oil -one & half liter

Sunflower oil – one & half liter

Marine salt

 

 

 

 

 

 

 

Clean well each mushroom from the impurities one by one, do it very carefully using the knife and a brush.

 

 

 

 

 

 

 

 

After cleaned quicly pass each mushroom under running fresh water to remove all the residual, do it fast to avoid to soak the mushrooms.

 

 

 

 

 

 

 

 

 

 

Dry them one by one with clean kitchen clothe and put them ready.

 

 

 

 

 

 

 

 

 

You can prepare the bread by yourself using dried bread and the blended otherwise you can buy it in the market.

 

 

 

 

 

 

 

 

Some fresh black pepper is indicated to enhance the mushrooms taste.

I start adding two pinches of marine salt to three or four eggs, this depends on the quantity of mushrooms I have to fry.

 

 

 

 

 

 

 

 

 

Also the black pepper is added now, not too much an hint is enough.

 

 

 

 

 

 

 

 

Whip the eggs.

 

 

 

 

 

 

 

 

You will get an homogeneous fluid.

 

 

 

 

 

 

 

 

 

 

Check the grated bread, better is to pass it through a large strainer.

 

 

 

 

 

 

 

 

Carefully cut each mushroom in slices just less than half inch, using a sharpen knife.

I will fry the mushroom old fashion: I use a pot and not a modern deep fry machine; if you have one well: use it ! (300 F – 180 C).

I add one liter of peanut oil and one liter of sunflower oil.

I start the fire to make the oil to boil.

I drown each piece of mushroom in to the eggs fluid making each side well seasoned.

 

 

 

 

 

 

 

 

 

Do it with kindness without break the mushrooms.

 

 

 

 

 

 

 

 

 

After this I go to bread the mushroom sides.

 

 

 

 

 

 

 

 

 

 

Be careful: the mushrooms are so delicate.

 

 

 

 

 

 

 

 

 

 

I cover well tapping with my fingers, then I will remove the excess of bread.

As the oil is at temperature I gently drop one by one the mushrooms in to it: be careful to not burn yourself, take all the safety misure to prevent the pot to fall down: and keep children and pets off from your kitchen while cooking.

 

How to check when the oil is at temperature: drop one small leaf of sage or even a toothpick in to the oil as it starts to fry means that the temperature is good.

 

 

 

 

 

 

Fry keeping the fire high, only few pieces a time.

 

 

 

 

 

 

 

 

 

After two minutes turn each piece upside down this to properly cook both the sides.

Use a steel or a wooden tool to do it, wooden tools are to be preferred always.

After two minutes it should be ready but check the color and if the consistence of the bread is solid which means it is ready.

 

 

 

 

 

 

 

 

Use a tool to recover the fried mushrooms, one by one.

 

 

 

 

 

 

 

 

 

You see the beautiful color and the solidity of this mushroom.

 

 

 

 

 

 

 

 

 

A clean kitchen-cloth or paper in to a bowl will absorb the excess of oil.

 

 

 

 

 

 

 

 

 

You can make more layer of paper to absorb the oil, this is upon the quantity of mushrooms you are going to fry.
