Ingredients:

Butter – 4 oz (100 grams)

Eggs – two

Flour 00 – 3.5 oz (100 grams)

Sugar (brown) – 3.5 oz (100 grams)

Raisins – 2 oz (50 grams)

Lemon – one

Ricotta (or Cream-cheese) – one pound (500 grams)

 

Simple and easy to do.

 

 

 

Wet the raisins in fresh water.

 

 

 

 

 

 

After 5-6 minutes squeeze the exceed of water from the raisins.

 

 

 

 

 

 

 

Put the raisins in to a cup and add the juice of one lemon to it, let to stay for one hour.

Put the butter in to a bowl to melt.

 

 

 

 

 

 

You can melt the butter by bagnomaria.

 

 

 

 

 

 

To make bagnomaria you need to put some water to boil.

 

 

 

 

 

 

 

After this, seat the bowl containing the butter on top of the pot, keeping the water boiling low.

 

 

 

 

 

The butter will quickly melt.

Add the sugar stirring and mixing it with the butter.

Move from bagnomaria.
