Cooking Foods Italian Recipes – Fast Zucchini

Just a simple thing, few vegetables to boil and a bit of fantasy!

Zucchini Fast (1)

Ingredients:

Zucchini

Tomatoes (perini, pelati, fresh and mature tomatoes)

Scallion

Garlic

Capers (under vinegar)

Marine salt

Extra virgin olive oil

Boil some water with a pinch or two of marine salt.Zucchini Fast (2)

Cut off the head and stem of the zucchini.Zucchini Fast (3)

Chop scallion and garlic.Zucchini Fast (4)

Drop the scallion and garlic in the boiling water.Zucchini Fast (6)

Drop the tomatoes in to the water.Zucchini Fast (7)

Let the tomatoes to boil only two minutes. Zucchini Fast (8)

Recover the tomatoes from the water.

Peel their skin.Zucchini Fast (15)

Use a fork to mash the tomatoes.

Add half of  small spoon of marine salt and mix well.Zucchini Fast (17)

cut the zucchini (half inch).

Boil the zucchini four minutes.Zucchini Fast (12)

Use the colander to get the vegetable from the water.Zucchini Fast (18)

Put ther veggies inside a bowl.Zucchini Fast (21)

Add chopped capers to the mash tomatoes.

Drop the sauce on the zuchini.Zucchini Fast (22)

Mix well and serve.
