Cooking Foods Italian Recipes – Fish “Clean” Sauce

Get some spices you like.

You need sage, garlic, basil or parsley… 

Tomato and onion, I like salt capers too….  Any kind of fish is good… just it need to be fresh.

Lets start!

 Chop one onion and start to fry it in extra virgin olive oil.

 Chop garlic, basil and capers.

Add as the onion fades…
Some pine-cones are good too.

 Kindly fry two-three minutes, be careful to not burn the garlic.

 Add the whole fish, cook five minutes one side…

Turn it upside down and cook other side five minutes.

Drop half glass of white wine.
Cover and let cook for five-seven minutes.

The fish is cooked, set the fire off.

Get only the fish and put in to a plate.

Eventually remove fish bones, fins from the “soffritto”

Using fork and knife clean the flesh from the bones. 

As this is separated, you will use the bones to make broth for other recipes.

Put back the fish meat in to the fry-pan, start the fire.

I add two laurel leaves.

Add tomato juice, one cup should be enough.

Stir well cooking for two three minutes then add half glass of wine (again? yes!)

Cook the sauce for about ten minutes, you will see it reducing, remember to stir and to check the salinity…

It is ready for your “spaghetti al dente” !
