ingredients:

soft cookies (“savoiardi” or “caporali”) 300 grams/10 ounces

fresh soft salty cheese “ricotta” 500 grams/17 ounces

fresh soft sweet cheese “mascarpone” 500 grams/17 ounces

you can use any kind of fresh soft cheese: just add sugar and a pinch of salt

two eggs

two-three spoons of honey

one glass of coffee

brown sugar and milk

 

the proper kind of cookies “caporali”for the tiramisù are soft insidemake a first layer inside an oven pan preapre coffee with “moka” add sugar to the coffee add for each coffee one spoon of milk (cow milk)
spread on top of the first layer of cookiesthen make another layer of cookies on the top
spread again the coffee on the topI get two eggs and I divide the yolk from the whiteI work the white to whip it up then I put a part inside a bowlnow I use two kinds of soft cheese: “ricotta” (salty) and “mascarpone” (sweet)I blend the two cheesesI add two spoons of honey Add the yolksblend nowput inside the bowl with the whites mixing all togetherspread on top of the cookiesput inside the fridge for few hourstake from the fridge cut and serve
