Ingredients:

Onion – two-three

Eggs – six

Parsley – few leaves

Garlic – few cloves

Parmesan grated cheese – 300 grams (10)

extra virgin olive oil – two-three spoons

Marine salt – three-five pinches

Add one spoon of extra virgin olive oil to a fry-pan.

As the onion fades add one pinch of marine salt, keep the fire medium until the onion are cooked.

As you see in the picture there is too much cheese and the mixture became too thick.

You can cover with a lid, cook for six-eight  minutes with low fire, every two-three minutes move the omelet from the bottom of the fry-pan shaking it (gently).

The border is taking color which means that the bottom side of the omelet is ready.

Shake a bit the fry-pan to understand is the omelet is cooked and hard enough to capsize.

In this case the omelet was still too liquid, so I decided to cook it another three-four minutes (covered, at low fire).

I try again: this time the omelet is ready.

I use to drop the omelet in a plate (its cooked bottom down), then I use the plate to capsize the omelet.

Cook five-six minutes on the other side to complete the cooking.
