Ingredients:

red-cabbage 
celeriac or turnip 
fennel
topinambur (Jerusalem artichoke)
onions 
potato 
garlic 
sage 
rosemary 
basil 
marine salt

 

Cut only half of red cabbage and start to boil it in a gallon of water to prepare soups: cover with a lid, set the fire high and as steam is coming out set the fire low rosemary, sage, basil and garlic  chop small the spices add to the pot cut the potatoes in small dicesadd to the pot do the same for the onion and the fennel cover and put to boil for twenty minutes after that chop everything with the mixer get the other half of red cabbage cut in pieces of one inchadd in the pot do the same with the celeriacsame size also the topinamburadd all the veggies to the pot and stir add three pinches of salt: you will check salinity later on you can add more if needed stir and boil for twenty minutes stop the fire and check the salinity add two-three spoons of extra virgin olive oil  stir and cover and keep ready to serve spread grated parmisan cheese on top
