Cooking Foods Italian Recipes – Smoked Turkey Risotto (Risotto Petto Tacchino Affumicato)

Try smoked beef, fish or turkey  to make flavoured dishes, sometimes I get them in the markets, or I made with my barbeque. I made it in this way: cut in half and barely broiled on wooden fire BBQ five minutes for each side.

Other ingredients I used are fresh turmeric, basil, capers, garlic, onion, carrot. Chopped and ready.

 

 

 

 

 

I kept some asparagus stems to make a vegetal broth. You can use onion or other vegetable you like.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

I cut the pancetta in pieces.

 

 

 

 

 

 

I fry it in the pot adding two-three spoons of extra virgin olive oil.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

As it is roasted I add the chopped flavours.

 

 

 

 

 

 

 

 

I prepared the turkey breast ready. I cut it in slides.

 

 

 

 

 

Then in cubes 1×1 inch.

 

 

 

 

the “soffritto” is ready now.

 

 

 

 

 

Drop the turkey breast in the pot.

 

 

 

 

 

Stir well.

 

 

 

 

 

I like to add some spices: dry porcini mushrooms and laurel (also thyme, sage, mirth, if you  have are good)

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Stir well to roast the turkey breast.

 

 

 

 

 

As it looks ready add half glass of white wine. Stir.

 

 

 

 

 

Add two spoons of tomato juice. Stir.

 

 

 

 

 

Drop the rice: I do one pound of “carnaroli” rice for one pound of turkey breast.

 

 

 

 

 

Stir well.

 

 

 

 

 

Get the vegetal broth we already prepare dwith the asparagus stems.

 

 

 

 

 

 

Add half glass per time, stir and wait that the rice absorb the broth, then add more until the end of cooking (appx. 30 minutes).

 

 

 

 

 

 

Add two pinches of marine salt. Stir.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Add the broth and stir until the risotto is ready, remember to check the salinity and add more salt only if needed, a pinch per time.

 

 

 

 

 

 

 

Whern is almost ready add another half glass of white wine: the flavour needed. Stir well then serve.
