Fresh squids – 1 kg/2 pounds

Cut the squid in pieces.

Cut or keep the whole legs: depending on the squid size.

You need fresh asparagus, garlic, potato, extra virgin olive oil and marine salt, other ingredients are optional.

I prepared a seacricket broth (1-2 liter its enough): this is also needed to make the soup, you can use any fish.

Cut the asparagus heads and keep for later.

Cut the asparagus in dices.

Fry part of the the squid legs in half glass of extra virgin olive oil.

Let the squid cook 4-5 minutes before to add more of them, this is to avoid to just boil the squids in the same water they release, they need to fry and their water to dry before to add more of them.

It may be you divide them in two parts, perhaps in three, anyway as they are cooked you take from the fry pan and seat in a plate.

As you see the squid colored the oil making it tasty, drop in it a potato cut in small cubes of 1 inch.

Fry two-three minutes, stir, add some broth.

Add the asparagus (keep the heads for later on).

Add more broth.

Boil five-seven minutes, then use the blender.

Add the squid heads, let boil two minutes.

Add the squid legs. 

Add one full spoon of tomato concentrate, also tomato juice is fine only you need to boil longer.

Add two pinches of marine salt.

Add the asparagus heads, boil just one minutes, check the salinity, add more salt if needed.

Add half glass of white wine, let boil one more minute to vaporize the alcohol, then is ready!
