Cooking Foods Italian Recipes: Wildboar & Deer Offals Preparation – Interiora di Cinghiale e Capriolo

Please note that you must cook the food before to eat it : never eat games meat raw!

The following is intended how to prepare games offals before to cook them.

 

 I inform you that in this post there are bloody photos related to the preparation of this recipe: if you are sensitive to blood please don’t go further.

 

 

I’d like to show you how to get  rid of the strong odor from game internal organs, especially kidney and heart are very tasty but, before to be cooked, they must be properly prepared.

This is what I do.

 

 

 

 

This is an heart.

 

 

 

 

 

 

 

Kidneys.

 

 

 

 

 

 

 

Laurel and garlic have strong flavor, I like to use sage, too.

 

 

 

 

 

 

Chop the garlic small.

 

 

 

 

 

 

Break the laurel with your fingers, or use a knife, in small pieces.

 

 

 

 

 

 

Mix laurel and garlic with the meat.

 

 

 

 

 

 

 

 

Cut two lemons in wheels.

 

 

 

 

 

 

 

Add to the meat.

 

 

 

 

 

 

Add half glass of wine.

 

 

 

 

 

 

 

 

 

Keep covered and refrigerate (but not frozen) for at least 12 hours.

Discard all the residuals from leaves, lemon and garlic before to cook: regarding the juice you can discard or, if you like strong flavor, use it is up to your taste.
