Today we are going to prepare simple and delicious  “Seppie con Piselli

Ingredients: (6 portions)

Fresh Cuttlefish (Sepia) already cleaned 800 grams (check the section”Preparations”-“Cleaning Fish: Squid” if you want to clean up by yourself;

Small Green Peas: half kilo (1 pound) usually I use fresh or in-the-can peas, the dried peas needs to stay 24 hours sunken in fresh water before to be cooked,

Garlic 3  cloves – Laurel 2 leaves – three fresh Tomatoes or a milk cup of Tomato Sauce

half glass of  Extra Virgin Oilive Oil – one glass of White Wine – two pinch of Salt

 Start pouring half glass of E.V.O.Oil in to the pot, let it heat…

 

 

 

 

 

 

 

 

 

 

 put the Garlic chives cut in the middle and fry until the Garlic fades yallowing,

 Cuttlefish already cut in pieces and let cook open pot, so the vapour goes away,

 

 

 

 

 

 

 

 

 

 

 adding the Salt, let the Cuttlefish cook, cooking they will dry ,letting their water out,when you see they are ready and their water has evaporated you go for …

 

 

 

 

 

 

 

 

 

 

 the White Wine, adding half glass now.

 After that you add the Small Green Peas, 

 

 

 

 

 

 

 

 

 

 

 

 

 all of them,

 and cook, for at least other 3-4 minutes,

 

 

 

 

 

 

 

 

 after you will add the Tomato Sauce…..

 Now you add the remaining half glass of White Wine…
