“Il Pollo Alla Cacciatora!!!” you will be able to make this wonderful preparation today and, after you have one bite of it, you will think: “WOW!”

I translated for you our old recipe as “Hunted Chicken” or Hunter’s Chicken” the important of a recipe is not the name but the taste… this is how my mom thought me how to make it…

Ingredients: (8 portions)

one Onion (I prefer “Tropea Onions”)  – two Pepper Bells – three Carrots

4 or 5 Garlic Cloves – some Black Olives & also Green Olives

some Capers, Rosemary and Laurel, Dried Mushroom and Pine-cones  “pinolo”

two Tomatoes (or a glass of tomato sauce)

one glass of White Wine – half glass of Extra Virgin Olive Oil

Marine Salt and the Chicken! (1 kilo of cleaned meat)

First of all get rid of the hair & feathers residues (see in the “Preparations” section)

 

 

 

 

 

 

 

 

 

 

 

 

 

carefully go to clean the skin of the chicken

 

 

 

 

 

 

 

 

 

 

 

 

 

if the residual of the feathers is not removed it will compromize the final taste, so be patient and work on it!

put half fist of Salt Capers in to fresh water and let them few minutes sunk, if you have only Capers conserved in Vinegar just squeeze them to separate part of the vinegar, if you do not have Capers what to say…do without Capers!

 

 

 

 

 

 

 

 

 

 

 

 

drop half glass of Extra Virgin Olive Oil in the pot…I reccomand you Extra Virgin Olive Oil, it is a little bit expensive I know, but it cannot be replaced by anything, this is a fact!

 

 

 

 

 

 

 

 

 

 

as the oil is hot drop in it first the Carrots, cut in pieces…

 

 

 

 

 

 

 

 

 

 

 

 

 

 

as the Carrots fade, add the Laurel and Rosemary….

 

 

 

 

 

 

 

 

 

 

 

 

 

…cut the Pepper Bells in pieces and add them in the pot….

 

 

 

 

 

 

 

 

 

 

 

 

 

let them fade, then add the Onions in pieces and let them cook few minutes…

add the pieces of chicken to the pot

 

 

 

 

 

 

 

 

 

 

 

 

 

 

take the Capers out from the water and squeeze them,

 

 

 

 

 

 

 

 

 

 

 

 

 

then drop the Capers in the pot

 

 

 

 

 

 

 

 

 

 

 

 

 

add the Olives to the rest….

 

 

 

 

 

 

 

 

 

 

 

 

 

 

and the Tomatoes cut in small pieces, too.

 

 

 

 

 

 

 

 

 

 

 

 

 

let cook without lid for 15- 20 minutes, stirring every 5 minutes, after that add only half glass of  White Wine

continue stirring every 5 minutes, meantime you go for Dried Mushroom and Pine-cones  “pinolo”

 

 

 

 

 

 

 

 

 

 

 

 

drop the Dried Mushroom in warm water, leave in it for around 5 minutes

 

 

 

 

 

 

 

 

 

 

 

 

 

add the Pine-cone  “pinolo” in the pot

 

 

 

 

 

 

 

 

 

 

 

 

 

take the Dried Mushroom out from the water, squeeze and cut them before to add in the pot

 

 

 

 

 

 

 

 

 

 

 

 

during this time you always stirred the Chicken every 5 minutes.

Now add the clean part of the water used to “revive” the Dried Mushroom” pay attention to not drop impurities (like dust, ground, small leaves, etc.)

continue to stir, now it is time to add….the most important ingredient….

 

 

 

 

 

 

 

 

 

 

 

 

the Marine Salt !!! I drop less then 10 grams, this is upon to many factors: the weight of the chicken I use, if the pepper bells taste too sweet, if the salt-capers are too strong, if I used fresh tomatoes or tomato sauce, …..many factors. you must remember to check a bite of meat or a tea spoon of souce during the preparation to taste if the quantity of salt is fine with you, be able to salt the food it’s the most important thing preparing a recipe! this is the reason why I do not give you exact quantities of the ingredients: I want promote you as cook not as chemist! I want to teach you how to do any dish with the ingredients you have available, I don’t want you to go crazy around the markets because my recipes have ingredients difficult to find.

I taste with my mouth, then I wash very well my hands! (obvious)

You don’t have to do it! Use a spoon!!! Kindly always use precautions! do not dive your fingers in the boiling food! you will be burnt. please don’t do it. If I do it’s only my choice and it is because I know how to do it but I cannot show you with the pictures, remember there are people walking barefoot on ashes….

 

 

 

 

 

 

 

 

 

 

 

It is time to add the rest of the White Wine…

 

 

 

 

 

 

 

 

 

 

 

 

 

 

may be you forgot and drunk it already! it’s half glass…of  White Wine….

it is almost 45 minutes, may be one hour since we start! So let the alcohool to evaporate, just check the salt for the last time, and then……
