Italian Recipe: Cooking Traditional Seafood – Seafood Pasta “Allo Scoglio”- Aldentekitchen

Hey, this is easy to do!

 Ingredients for one kilo of  “Linguine” or “Spaghetti” (one kilo of Pasta is enough for 10/12  people):

one already cleaned Squid or Cuttlefish may be 300 grams

one hand of Shrimps or Prawns let me say 300 grams

one hand of Shell-Fish like Sea-Crickets or “Scampi” or Langustines may be 300 grams

three hands of Mussels, clean, may be 500 grams…1 pound…

half glass of Extra Virgin Olive Oil – half spoon of Garlic & Parsley mix;

half glass of Tomato Sauce – half glass of White Wine – two spoons of butter…

Salt, three pinches…maybe less because we are going to use part of the “Mussel” water: you should always check the salt during the preparation, in particular by the end, when all the ingredients are almost cooked…

in this preparation Salt must be checked carefully because we are going to add part of the water coming from the Mussels which is already salty….so do not add to much salt in the beginning!

Put in a pot two glasses of water, put the mussels in to the pot cover and let them cook for 5- 10 minutes, stirring (from the bottom to the top) every 3 minutes, when they all open means they are cooked. Keep part of the water remained in the pot and filter it to clean from impurities.

 in another pot boil the water to cook the pasta, meanwhile we go for the sauce:

put half glass of oil in a pan make it hot, then drop the mix of Garlic & Parsley;

 

 

 

 

 

 

 

 

 

 add the Shell-Fish and the Squid (you already cut in pieces the squid…),

let cook for 4-5 minutes, then…..

 

 

 

 

 

 

 

 

 

 

 

 …..add the Shrimps….

 

 

 

 

 

 

 

 

 

 

 

 

 

 stirring and let cook for other 4-5 minutes….

 

 

 

 

 

 

 

 

 

 

 

 

add half glass of the water produced cooking the mussels (must be filtered to clean from impuriities)

 

 

 

 

 

 

 

 

 

 

 

meanwhile you cooked the seafood and boiled the water for the pasta, you will clean the mussel from their external shells (halves or valves)  

 

 

 

 

 

 

 

 

 

 

 drop the mussels meat in the mixture…you can add some whole mussels with the shell if you want!

 

 

 

 

 

 

 

 

 

 

 

 

 stir and mix the seafood…cook for 2-3 minutes…

 

 

 

 

 

 

 

 

 

 

 

 add the half glass of white wine…let cook 3-4 minutes

 add two spoons of Tomato Sauce….also the salt and cook 2-3 minutes then check for the salt… add more salt if needed…..

After take out from the fire, add one or two spoons of butter (if you like, usually we do not add butter to fish sauce, but here it will be a sweet surprise for you!)

 

 

 

 

 

 

 

 

 

 

 

Did you already cook your “Linguine Al Dente”? or “Spaghetti”? Yes? so drop the sauce on top of  “Pasta” and mix, or drop the “Pasta” in the seafood sauce…do whatever you like, the result is guaranteed!
