We have a good morning in the woods around my house, my son got many mushrooms “Porcini” & “Ovoli”…. let’s go for a simple and good recipe…You can use “porcini” or any other kind of mushroom in this preparation.

Always check the mushrooms with an expert because many quality are toxic and could poison you.

Ingredients:

“Porcini” mushrooms

Parsley & Garlic mix

Oregan

Extra Virgin Olive Oil

White Wine

 Marine Salt

we have to clean ground and residuals from the mushroom

 

 

 

 

 

 

 

 

 

I use knife and a small brush, starting to kindly scratch the surface of the mushroom when it is dry.

 

 

 

 

 

 

 

 

 

 

Separate the head from the stem (cut in between) and clean every part.

 

 

 

 

 

 

 

 

 

 

 

Use a small brush and a wet cloth to clean, then cut each stems of the  mushroom in cubes.

Put two spoons of extra virgin olive oil to warm up in to a capient pot.

 

 

 

 

 

 

 

 

 

 

Just to avoid the mushrooms to stick the bottom of the pot I suggest to add a small quantity of butter, too.

 

 

 

 

 

 

 

 

 

 

 

Add two spoons of garlic & parsley mix (refer to category “preparations”).

 

 

 

 

 

 

 

 

 

Let it fry being careful not to burn the parsley (just one-two minutes…)

Drop the cubes from the stems of the mushrooms down.

 

 

 

 

 

 

 

 

 

 

 

Stir & mix everything well, let it cooks for three-five minutes.

 

 

 

 

 

 

 

 

 

 

Cut in small cubes the heads now.

 

 

 

 

 

 

 

 

 

 

Because more tender the heads are added later.

Drop them down to join the stems.

 

 

 

 

 

 

 

 

 

Soon the mushrooms volume will reduce, you keep stirring every two-three minutes, keeping the fire low and paying attention that the mushrooms not stick to the bottom of the pot.

 

 

 

 

 

 

 

 

 

Add a good pinch of marine salt, remember to check again by the end.

The mushrooms will give out their water, you check with a spoon they don’t have to dry too much.

 

 

 

 

 

 

 

 

 

As the water in the pot evaporates add half glass of white wine and stir.

You need a pinch of dry oregano, if you get it fresh is better. You can chop the oregano or leave it whole.

 

 

 

 

 

 

 

 

 

After you added the white wine you stir well, you will see the mushrooms to absorb the wine, then you add the oregano.

 

 

 

 

 

 

 

 

 

 

 

Mix well everything…  stop the fire the oregano do not have to cook.
