This dish is AWESOME !!!

I love it and you will taste one of the best preparations, made just following my instruction.

 

 

 

Ingredients: (6 portions but you’ll hope to eat it all alone, believe me!)

Prawns or Shrimps,fresh and already cleaned, 1 pound (half kilo)

Garlic three cloves

three whole fresh Eggs

Parmesan or Pecorino grounded cheese appx. one pound (400 grams)

Extra Virgin Olive Oil half glass

Salt

 

 

 

 

cut the Garlic in small pieces

 

 

 

 

 

 

 

 

 

 

 

fry the Garlic with a quarter of glass of oil

 

 

 

 

 

 

 

 

 

 

 

as the Garlic fades, drop the Prawns in to the frying pan

 

 

 

 

 

 

 

 

 

 

 

all the Prawns down !

 

 

 

 

 

 

 

 

 

 

 

add a pinch of salt (2 to 4 grams) to the Prawns and cook them well,

please note that the quantity of salt depends from the cheese you will use, I love “pecorino” !!!

 

 

 

 

 

 

 

 

 

 

as the Prawns are cooked move them in to a clean bowl (bastardella)

add the three eggs to the prawns

 

 

 

 

 

 

 

 

 

 

 

now you have to mix well

 

 

 

 

 

 

 

 

 

 

 

 

add the 400 grams of grounded seasoned cheese and mix all together very well,

use only a seasoned cheese like Pecorino or Parmesan,

do not use fresh or creamy cheese or your omelet will break!

add the rest of the oil to a clean frying pan and let it to become hot

 

 

 

 

 

 

 

 

 

 

 

 

 

now drop the mix in the frying pan,

 

 

 

 

 

 

 

 

 

 

 

 

 

drop it all and  do not stir, simply move the pan to make the omelet circular sized

 

 

 

 

 

 

 

 

 

 

let it cook (10-15 minutes) then check the consistence

as you see that the omelet is solid enough drop it in a plate (I prefer a pan-cover because it has the handle which helps me to turn upside down the omelet)

 

 

 

 

 

 

 

 

 

 

 

this operation is delicate, avoid to break the omelet working easy and slowly

 

 

 

 

 

 

 

 

 

 

 

 

turn the omelet upside down in to the frying pan again

 

 

 

 

 

 

 

 

 

 

 

 

 

let it cook again for 5-10 minutes, checking the consistence, when the omelet is hard enough pass it in to a plate

 

 

 

 

 

 

 

 

 

 

 

 

now you can eat the Shrimps Omelet………WELCOME IN PARADISE !!!
