Salt Anchovies Pasta is one of the tastiest plates eat by the old italian fishermen, still I remember when, many years ago, my mother prepared Salt Anchovies in wooden barrels every spring.  Only the best Fresh Anchovies  are settled under salt, (and when needed under a mix of salt & water named “Salamoia” this added to preserve the barrelled anchoves for long time) then, after 40 days the anchovies are ready to be moved from the barrel to small glass vases named “arbanelle” and again covered by new salt and put under the weight of a stone. The process is long  and needs daily care, I hope to show you by the next summer how to make this wonderful preparation because i cannot do this year but really you don’t need to make it at home; you can buy very good quality of Salt Anchovies in the store without make a mess at home. Ingredients: (for two)

few Anchovies 10 ounces (300 grams) 

two Garlic Cloves 

a quarter of glass of Extra Virgin Olive Oil

a quarter of glass of White Wine

200 grams (7 ounces) of Pasta (Spaghetti, linguine, Farfalle, Penne, or any type you like, I suggest the following sauce  for dry pasta or “Pasta di Semola di Grano Duro” and not for “Pasta Fresca” but you can do everything you like, today I’ll use “Tortiglioni”)

 Let’s go to peel the Garlic 

 

 

 

 

 

 

 

 

 

 

 

 when the cloves are clean

 

 

 

 

 

 

 

 

 

 

 

 

 have to be chopped in slices

 

 

 

 

 

 

 

 

 

 

 

 warm up the Extra Virgin Olive Oil

 

 

 

 

 

 

 

 

 

 

 

 add the Garlic slices and separate them each other with a wooden stick, otherwise they could glue together

 before to put the Garlic to fry you should clean the Salt Anchovies

 as the Garlic fades add the Anchovies, pay attention that the fish has not to be too wet, if you drip water in the boiling oil you will be spayed by it: I don’t want you get burnt! use always precaution while cooking!

 don’t let the Anchovies melt too much: add the WHite Wine

 

 

 

 

 

 

 

 

 

 

 

 just let the Alcohol to evaporate

 

 

 

 

 

 

 

 

 

 

 then add the Pasta, already cooked a part in boiling water and salt as per category “Preparations How To Cook Pasta Al Dente”

 

 

 

 

 

 

 

 

 

 

 put on the fire and stir for no more than one minute…
