Cooking Foods Italian Recipes – White “Porcini” Mushroom Sauce – Sugo Bianco di Porcini

 

 

 

 

 

 

 

 

 

White “Porcini” Mushroom Sauce. This sauce is so tasty on pasta, though I use it on the Meats, especially Filet of Veal… it is truly wonderful!

Ingredients: (4 Portions)

1 kilo of “Porcini” Mushroom

2 spoons of Parsley & Garlic Mix

2 spoons of Extra Virgin Olive Oil

2 spoons of Butter

1/2 glass of White Wine

Marine Salt

 

 

 

 

 

 

 

 

 

 

 

today I bought the Porcini Mushrooms, inside the containers are the warranty check labels for the quality of these mushroom, please remember that many mushroom are toxic even though they look like “Porcini” the could poison and kill you so check always for a qualified warranty Officer label inside the container.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

you have to clean carefully the mushrooms using a small brush and knife and then wash them under fresh running water

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

put two spoons of Extra Virgin Olive Oil and two spoons of butter in a fry-pan, add a spoon of Parsley and Garlic mix, let cook but with a smooth flame…do not burn it!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

cut in small pieces the “Porcini”

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

drop the chopped mushroom in the fry-pan

 

 

 

 

 

 

 

 

 

 

stirr well the mushroom with the mix, be kinda please!

 

 

 

 

 

 

 

 

 

look that for one kilo of mushroom you need a rich pinch of Marine Salt, but you could just add a normal pinch of salt now and then, after cheched you can adjust adding more later…

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

stir wellwhile cooking, you will see the mushrooms reduce the volume due to the lost of their water

 

 

 

 

 

 

 

as the mushrooms reduced half of the volume, you will add half glass of white wine

 

 

 

 

 

 

 

 

 

 

 

remember to stir frequently with kindness….mushrooms are so delicate!

 

 

 

 

 

 

 

 

due to the heat part of the mushrooms will melt: this will create a delicate souce….

 

 

 

 

 

 

 

 

….look! this is so wonderfully tasty !!!

 

 

 

 

 

 

 

 

check for the salt…after 20-25 minutes since the beginning it will be ready

 

 

 

 

 

 

 

 

today I dropped hand made “Pappardelle” in the sauce and I mix everything

 

 

 

 

 

 

 

 

 

 

 

this is just a picture of small part only to show you: I dropped more thanone pound of “Pappardelle in the sauce and we didn’t have enough!!!
