Very fast I will explain you how to make the traditional “frittura di pesce” the ingredients are few: only flour and…fresh fishObviously you’ll need the proper oil to fry and this time it is a mix of sunflower seeds oil and peanuts oil (half & half) the seeds oil it is better than extra virgin oil when you deep fry, and this is my humble opinion: the seeds oil make the “frittura” more crispy and less greasy.

As the “frittura” will be ready you’ll need two other things: lemon & marine salt, this is the only seasoning permitted with fried fresh fish, if you want mayonnaise it’s worthy you to use frozen fish and to follow someone else blog…

Today I’ve bought some fresh small mullet, shrimps and squids.

If you like you can buy different type of fish, which you will cook just following the same procedure, if your fish is too big (more then one pound -500 grams) you should cut it smaller, this in order to cook it properly.

Remember to fry only small quantities for time; this in order to keep the oil at constant temperature: you will see that you’ll use less time to complete the job in this way.

Warning: boiling oil is extremely dangerous! Be careful and keep concentrated on what you do, do not allowed pets around in your kitchen while you are cooking and more pay attention to your kids eventually playing in the kitchen: this is not safe!

I inform you that in this post there are bloody photos related to the preparation of this recipe: if you are sensitive to blood please don’t go further.

Start cleaning the mullet from their scales.

Clean and wash the squids (refer to category: preparations”).

 

 

 

 

 

 

 

 

 

 

Cut the squids heads in rings also cut the legs.

You’ll need to use a strainer.

 

 

 

 

 

 

 

 

 

 

Pour a generous quantity of sunflower seeds & peanuts oil inside a pot, if you have a better toolsuch as na ellectronic fryer you will use it, set the temperature above 250 degrees Celsius (480 Fahrenheit or more).

 

 

 

 

 

 

 

 

 

Just because I use the pot, I put a toothpick in to the oil in order to check when it will be ready (when the toothpick starts to fry).

Wait until that moment.

After, and only after the oil temperature is good, you will start to put a small quantity of squid in the flour and make it spread on all the surface of each piece of fish.

 

 

 

 

 

 

 

 

 

 

 

Then use the strainer to separate the flour in excess.

 

 

 

 

 

 

 

 

 

 

 

 

Carefully drop the pieces of fish inside the oil one by one.

 

 

 

 

 

 

 

 

 

 

 

 

After two-three minutes the fish surface will became crispy and you can take from the oil,

 

 

 

 

 

 

 

 

I use paper (for food) to absorb the excess of oil, often i use a clean napkin or dishcloth.

 

 

 

 

 

 

 

 

 

Give few minutes to make the oil hot again then repeat the process.

 

 

 

 

 

 

 

 

 

I use to cook the calamari first, followed by the fish and the shrimps (with their shells) last.

I drop carefully each piece, paying attention not to splash oil on my skin: be careful if the fish is too wet the water will make the oil jump all over and you could burn yourself, if this happen turn off the fire and cover with a lid the pot to avoid further accident, pay attention that the oil can get fire if it get contact with a flame when it is hot; if it get fire cover immediately the pot with a lid and turn off the gas or the power.

 

 

 

 

 

It is safer use a wooden tool to drown the piece of fish deep.

 

 

 

 

 

 

 

 

 

 

use the hands to spread well the flour on the fish.

 

 

 

 

 

 

 

 

 

 

 

I use only one hand in the flour keeping the other clean to use my kitchen tools.

 

 

 

 

 

 

 

 

 

 

You should get the pieces already cooked with a wooden tool.

 

 

 

 

 

 

 

 

 

Otherwise you can use a steel strainer.

 

 

 

 

 

 

 

 

 

You should jump the pieces of fish in the strainer to get rid of the flour in excess.

 

 

 

 

 

 

 

 

Do not park the floured-fish inside the strainer or the flour will glue on it making it not effective.

OK the squids are done, now we start to fry the mullet with the same system.

 

 

 

 

 

 

 

 

 

 

Jump well in the strainer…

 

 

 

 

 

 

 

 

Put to fry one by one.

 

 

 

 

 

 

 

 

 

 

 

Two-three minutes and they are done.

The shrimps are the last.

They cook very fast…two three minutes….

 

 

 

 

 

 

 

 

 

When you grab the shrimps be careful to not break the head or eventually some water could gush out making the boiling oil jump!

 

 

 

 

 

 

 

 

 

 

 

 

Finito! Spread marine salt and squeeze few drops of lemon on top, this will make you “frittura” excellent!!!
