Ingredients:
Angler fish – two pounds
Onion – one
Garlic – two cloves
Sage – few leaves
Laurel – few leaves
Parsley – few leaves chopped small
Pine cones – a bunch
Capers – a bunch
Tomato juice – three glasses
White wine – half glass
Extra virgin olive oil – three spoons
Butter – 2 oz (50 gr)
Marine salt
Chop onion, garlic, sage, parsley and keep separated, do not cut the laurel.
Start the soffritto with three spoons of extra virgin olive oil and the onion.
As the onion fades add garlic and sage.
You have to wash the capers to get rid of the salt.
Wash them well with water.
After the water is squeezed off, chop the capers and drop them in to the soffritto.
Add the whole laurel leaves, too.
Pine-cones are excellent ingredient: add one bunch ( 2 oz – 50 gr)
Yes there are some left…

This is going to be a terrific sauce!
Do not let the pine-cones to roast: promptly add the butter and fish (see next passage).

This is a fresh angler fish tie.
After washed in fresh water take off the skin, then separate the flesh from the bone with a sharpen knife.
Cut the flesh in big cubes.

Drop the butter in to the soffritto, stir well.
As the butter melted add the fish.
If you have too much fish add some per time, let it to take color then add the remaining fish.
The bone and the skin are very good to eventually prepare a fish broth.
I do not need broth today so I will frozen bone and skin, keeping for the next risotto with fish.
Anyway you can add the broth to replace wine and tomato juice, but not today.
Stir well until all the cubes of fish take color.

Add the parsley: it has been chopped small with the blender.
Stir well.
Add two-three pinches of marine salt: we will check the salinity later on.
Salt enhance the fish taste.
Raise the fire and add half glass of white wine.
The alcohol will steam off.
Cook for one minute.

Add the tomato juice: one glass per time.
If you like less sauce ad only one glass of tomato.
Stir well and cook 8-12 minutes: the sauce will become dense.
It is time to check for the salinity: add salt only if needed.
Check also if the tomato is cooked, the sauce has to get some consistency.
Color and flavor are incredible!

Use the sauce for pasta, drop some pieces of fish and pine-cones on top.
Today no pasta for me: I add the sauce to my polenta and I am going to have happiness and joy !!!
