We make a sauce based on the pesto recipe but using asparagus because I did not find basil in the market…this isn’t the original pesto but it is very good sauce for pasta and bruschetta….check on this website to get the original one too.
Clean and chop the asparagus in three parts: the harder part will be used in another preparations, to meke the pesto sauce we use only the tender parts.
Put garlic, grated pecorino or parmesan cheese and pine-cones in the blender, chop.
Add the stems of the asparagus and chop everything few seconds.
Chop only few seconds.
Add some extra virgin olive oil.
The sauce becomes very creamy.
Try a bit to check if more oil is necessary. This sauce has to be used as the original pesto as pasta sauce and is very good spread on bruschettas!
