Ingredients:
Lamb
Carrot
Onion
Rosemary
Garlic
Laurel
Extra virgin olive oil
White wine
Cream
Garlic and rosemary has to be chopped small.
Just like in the picture.
Fry onion, carrot, garlic and rosemary in two spoons of extra virgin olive oil.
As they fade add the lamb. Cookit mixing with the other ingredients.
Add one or two pinches of marine salt. Stir well.
The lamb has to roast to take color.
Add half glass of white wine. Cook to evaporate the wine alcohol (three-four minutes).
Add one glass of cream.
Stir well the lamb mixing the cream and the “soffritto” and cook three-four minutes.
Add another half glass of white wine.
Check the salinity.
Add more salt only if necessary.
Stir well and cook other three-four minutes. It is ready.
I suggest some boiled rice on the side; enjoy !
