Just a simple thing, few vegetables to boil and a bit of fantasy!
Ingredients:
Zucchini
Tomatoes (perini, pelati, fresh and mature tomatoes)
Scallion
Garlic
Capers (under vinegar)
Marine salt
Extra virgin olive oil
Boil some water with a pinch or two of marine salt.
Cut off the head and stem of the zucchini.
Chop scallion and garlic.
Drop the scallion and garlic in the boiling water.
Drop the tomatoes in to the water.
Let the tomatoes to boil only two minutes.
Recover the tomatoes from the water.
Peel their skin.
Use a fork to mash the tomatoes.
Add half of small spoon of marine salt and mix well.
cut the zucchini (half inch).
Boil the zucchini four minutes.
Use the colander to get the vegetable from the water.
Put ther veggies inside a bowl.
Add chopped capers to the mash tomatoes.
Drop the sauce on the zuchini.
Mix well and serve.
