Ingredients:
Pork Loin (fresh) 4 pounds – 2 Kilos
Marine salt two-three pinches
Laurel (bay-leaf) leaves – 2
White wine – half glass
Garlic – few cloves
Brown sugar – a pinch
Balsamic vinegar- one small spoon
Honey – half glass
Let’s start with a fresh pork loin, weight around 4 pounds, clean it well, than heat a fry-pan at high temperature , do not pour any oil or liquid,just heat the fry-pan 4-5 minutes.
After this seat the loin inside the fry-pan: it has to fry immediately.
I seat first on the fattier said, keep there 3-4 minutes, then upside down it.
After you roasted the two bigger sides, go to broil the other sides, the whole surface has to be roasted
Do it all the sides.
Do not overcook, just roast well the sides. Do this operation at high fire temperature, it will takes around 12-15 minutes from the beginning.
This is the result.
Place the meat on the wood and cut it in slices; usually I prefer half inch width.
Put oven paper in to an oven_pan, take the slices and re-make the loin seating the whole inside the oven pan.
Spread two-three pinches of marine salt on the top.
Just like that.
Put half glass of honey in a small bowl.
Add a couple of pinch of brawn sugar.
Add one small spoons of balsamic vinegar.
Put two bay-leaves (laurel) in the meat.
Position the leaves at the two sides.
Pour half glass of white wine around the beef, near the leaves.
Spread the honey sauce on the top.
Make the honey sauce to go inside the slices too.
Do not leave gap between the slices, gently press all together.
Finally cover with oven-paper.
Close the paper in the border.
Now it is ready to go in the oven.
Put in the oven already at 280 Celsius – 500 Fahrenheit.
Cook 30 minutes.
Serve in the plate with his own sauce on top of each slice.
