Let’s start having two pieces of beef (e.g. it can be beef, veal or pork file), inside a fry pan we have already broiled the meat on each side two minutes, at high fire (fuoco alto) without any condiments – we reduce now the fire to medium fire (fuoco vivace)chop some garlic
have some dried porcini mushrooms softened in water
add some soya sauce (one spoon) on top of the meat
add the same quantity of balsamic vinegar
turn the meat upside down, then cover and let it go for two minutes
open and add two spoons of extra virgin olive oil
turn upside down, then add two leaves of laurel
squeeze and chop the porcini mushrooms
add them and the chopped garlic in to the fry pan
add half glass of white wine
cover with a lid and cook two minutes
open the lid adding half glass of tomato sauce
turn upside down, then add two pinches of marine salt
add the remaining water from the mushrooms
cook two minutes, then turn upside down
spread on top two spoons of flour type 00
stir well in this way we are going to make a “salsa legata”
turn upside down the beef a couple of time
add a bunch of pine-cones
reducing, the sauce becomes consistent
cook two minutes turning upside down
you can serve along with steamed rice
