Fry it in two-three spoons of extra virgin olive oil.
Few fresh basil leaves are required.
As the garlic fades lets drop the basil in the soffritto but pay attention to the following…
…keep a lid ready to cover because some water from the basil went to the oil and spread all around! Protect yourself! Be careful to not have the oil getting in fire…
now your soffritto is ready.
Put the fishes in the soffritto (note that previously I washed and cleaned each one of them).
Lets put all together!
A good bunch of marine salt is needed.
Cook four-five minutes, then upsidedown each one of the fish, cook another four-five minutes, add half glass of white wine and finally stop the fire: are ready !!!
