This is my simple version of the “pasta alla Norma”
Ingredients: egg-plant, onion, garlic, milk and ricotta, extra virgin olive oil, marine salt.
peel the egg plant
cut it in small dices
put butter and extra virgin oil in the fry pan
add the onion
let the onion to fade
chop the garlic
gently stirring
let it fry only two minutes
drop the egg-plant a little by little
stir always
add two pinches of marine salt
stir
ayou will see the egg-plant reducing the volumeas the egg-plant take color add half glass of milk
let cook at slow fire
until it reduce and become almost dry
set the fire high
then add half glass of white wine
let the alcohol to evaporate
the ricotta cheese is seasoned, you can use the fresh one, if you like
first you have to warm up the egg-plant
second drop the pasta that you like
stir, mixing everything well
mix everything and serve
you can add chilly if you like it spiced
