First, put half fist of marine salt in 3-4 liter of fresh water.
Add vegetable you like (as garlic, onion, carrot, etc.) and the head of pig in the cold water, cover with a lid, then set up the fire and make the water to boil.
Note that before to boil the head of pig you have to carefully clean and wash it, burn all the hair on top of a flame.
Keep boiling until a fork can easily be inserted in the tongue, it should be around 30 minutes after the water start to boil.
Stop the fire, you can still keep the head inside the water until the hot cool down, when warm take out the head and put it in to a colander to drip the broth, keep the broth aside: we will use it later on.
Using a knife clean all the flesh from the bones.
Just making the blade to follow the bones you will do the job done.
Get all the flesh including the ears, tongue, eyes and muzzle, only clean the tongue from its skin (which is hard).
Cut the flesh in pieces and put in to a bowl.
Put the pieces of flesh in to a blender.
Minch the flesh with the blender.
Cut in short pieces and cook the asparagus in little boiling water for 2-3 minutes, then add them to the pig.
Add a couple of eggs to blend.
Add 200 grams of grated cheese (100 grams for each one egg) remember more eggs make it liquid more cheese make it dry.
This time I use ready “lasagna” from the market.
Boil 3-4 liters of water, put marine salt as to make any pasta, boil each one of the “lasagna” one or two minutes.
This is the secret to make a good oven cooked pasta!
Put inside a bowl containing fresh water.
Usually I transfer the lasagna to another container containing fresh water ready to be used to prepare the rolls.
You can keep there until you will finish the preparation.
Put one spoon of extra virgin olive oil in to an oven-pan, in aluminum is just fine.
Add two spoons of tomato sauce, this will wet the bottom of your rolls.
Just you have to spread it all around with a spoon.
I use another clean oven-pan to make-up the rolls.
Add one spoon from the blender.
Bring each roll to the other oven-pan, seat them side by side.
Complete filling the oven-pan.
Put in the oven at 400 Fahrenheit and let cook 5-6 minutes so the surface will dry a bit.
Put some butter in to a fry-pan.
Melt it, than add a couple of spoons of flour.
Stir mixing with the flour and butter.
Stir well until it looks like a cream….this is white wine “besciamella” cream !
Dress their top with the hot “besciamella” cream.
Drop some broth here and there, may be one glass…or more, is upon to you.
Put back in the hot oven, cook another 15 minutes… as you smell a good smell it should be ready!
Separate each “cannellone” to be seat in the dish.
