Separate the withes from the reds, keep aside and ready.
I will use this tool in the blender to prepare the wites.
I possess an excellent German blender.
This is the result (still raw Italian Meringa is made adding lemon and sugar and the cook in the oven…but not in this recipe!).
Without clean I drop all the reds at once in the blender.
Started the blender I add 200 grams of brown sugar.
I add 300 grams of quince jam.
Add 200 grams of flour type 00
Put this sweet paste in to a bowl.
Put some butter and flour on the inside of an oven pan.
Cook inthe oven at 280 celsius for 30 minutes but be careful as I always say sniff the smell of cake in the kitchen and the most important is check with a toothpick if the cake is ready.
As the cake cooled down spread two spoons of honey on top.
Finally decorate with quince jam !
