Ingredients:
Beef – one pound (or two)
Onion, carrot, garlic, celery, eventually herbs (thyme, basil, rosemary, laurel, juniper)
Tomato paste (concentrate) or sauce
Potato
Mushrooms
Red wine
Marine salt
To make it quick: cut the beef in large cubes (3 x 3 inches) set a large fry-pan on high fire, let heat well the fry-pan.
After this drop the cubes of beef and roast each side well.
Do not overcook, the beef will be ready as each side is brown, set apart for later.
Put two three spoons of extra virgin olive oil in a pot, to fry chopped onion.
You can add carrots, celery, garlic if you like.
As the onion fades drop the potatoes (cut half inch of width).
Also laurel (bay leaf) is good to add, along with thyme, sage, rosemary, ect. only remember to chop the rosemary very, very small.
Add mushrooms, also common champignons are good.
Cover with a lid, reduce the fire and let boil five-six minutes before to open.
Add two or three pinches of marine salt.
Stir well, if you like you can add chopped parsley or basil now.
Let boil five-six minutes.
Add one glass of red wine.
Stir then cover with the lid, let boil five-six minutes.
Open now.
Add one spoon of tomato concentrated, or sauce.
Stir well and rise the fire high.
Check the salinity, other two-three pinches of marine salt should be needed.
Stirring, cook two-three minutes.
Add one more glass of red wine, stir well.
Lower the fire and cook covered five-six minutes.
Add two spoons of corn flour, spread well, then stir.
Check again for the salinity, add salt if needed.
OK, it has to be ready serve in plate with its own sauce…buon appetito
