Very simple recipes, you just need:
Anchovies (under salt: you have to clean from the salt and bones, wash and set ready to use, otherwise you can find in the store under oil)
Scallion
Garlic
Extra Virgin Olive Oil
White Wine
Cut scallion and garlic in small slices.
Pour two-three spoons of extra virgin olive oil in to a fry-pan.
Make the garlic to yellowish, be careful to not burn it!
Rise the flame and drop the anchovies.
Do not let the anchovies to melt completely, as they start to melt…
…drop half glass of white wine.
Quickly stir and stop the fire. The sauce is ready.
Boil the pasta apart, when it is ready “al dente” heat the sauce, as it starts to boil drop the pasta in to it.
Serve in plate.
The uniquity of this only pasta with fish sauce is that you can spread parmesan cheese on top: in my country we never add cheese to any other fish sauces.
Usually I spread very spicy chilly oil on top… buon appetito!
