Chicken
Onion
Carrot
Garlic
Parsley
Extra virgin olive oil
Butter
Marine salt
Tomato juice
This time we are going to use more parsley and garlic than usual; you can add pepper, wine or other spices if you like.
Fry chopped onion and carrot in half butter and half extra virgin olive oil.

After five minutes add the salt: turn again upside down.
You will do this every five minutes until the chicken will be well roasted the garlic have to burn a little to give a strong spiced flavor.

Add two-three spoons of tomato juice.
Cover and let cook until the boiling sauce will produce steam.
Carefully shake the casserole to mix all together.
As the steam starts let cook five minutes.
After this open and turn the chicken upside down: check for the salinity and meantime see if it is too dry add white wine or broth to mantein humid the sauce.
Cook covered five minutes on the other side, then it should be ready.
