This sauce can be used to personalize your dishes.
Simple to prepare it: put butter (from cow milk) to melt in to a warm fry pan.
As the butter melt heat it up, and as it starts to fry add flour Type 00 one spoon a time and stir well with the butter.
Flour and butter will make a sort of paste, add two pinches of marine salt and reduce the fire and be careful to not burn it, keep stirring.
Add half glass of white wine and stir, if needed you can add more wine to get a softer sauce
More you cook more the sauce becomes dense, it has to remain firm on the spoon
You will use it to garnish cannelloni and lasagna, you can use it when it is warm, cold it becomes solid
