
Truffles, in particular White Truffles, are one of the most expensive food worldwide.
Luckily I live so close to Alba, Piedmont, the motherland of White Truffle.
Here a simple recipe to make your Spaghetti with White Truffle, very easy for you.
Ingredients: (4 portions)
30-50 grams of Truffles
500 grams of Spaghetti
two spoons of Butter
Four Eggs
Parsley & Garlic mix
Marine Salt
grated Parmesan Cheese if you like on the top…
melt the butter in a fry-pan
add a spoon of Parsley & Garlic Mix
let fry for two minutes
add a pinch of Marine Salt
a bunch of Marine Salt to cook the Spaghetti, later on…
the base is ready!
go to split yolk and white of the Eggs, we will use the yolk only
done!
let’s go to cook the Spaghetti…Al Dente!
drop the Spaghetti in to the boiling water, set them down using a fork (not the hand alike me…)
with a sharp an tiny blade we slice the truffle
chopping it in small pieces then!
AlDente Spaghetti should be perfect…look the followings pictures, I cut the Spaghetti for you and you can see the white spot inside: it has to cook more…
after two minutes I check again cutting another Spaghetti: still the white spot in the core: it has still to cook….
after two minutes look : no more white spot! it is perfectly Al Dente!!!
hurry up, go for the colander…
after dripped the water from the Spaghetti, let’s drop them in to the fry-pan and heat the butter for a while…stir everything very well!
take off fro the fire and add the four Egg-Yolks, mix immediately with the Spaghetti
the use of wooden tools is strongly suggested
drop on the top the chopped Truffles….you can add Parmesan Cheese if you like, and it is done! Simple and effective!
